With Spring biking right around the corner, I wanted to highlight a superfood trail mix recipe developed by American Pistachio Growers Association professional snowboard athlete Jeremy Jones to help fuel long days out on the trail. Pistachios offer an excellent blend of protein, carbohydrates, fiber, and fats (90% unsaturated) and are high in Vitamin B6.
The Pistachio (Pistacia vera) is a member of the cashew family, and the seed grows on a small tree. It is predominately cultivated in Iran, United States, Turkey, China, and Syria. Approximately 99 percent of U.S. pistachios are produced in California, with over 312,000 acres planted.

DIY Jeremy Jones “Pistachio Power Trail Mix”

- Ingredients: Pistachios (shelled), Cacao Nibs, Coconut Flakes, Mulberries
Mix all of the ingredients to make this super simple and nutritious mix.
Pistachios are extremely yummy (addictive), and this DYI mix looks especially tasty. I am sure once I eat a handful of the mix, I’ll be ready for some steep and deep runs in the snow and plenty of fun bike trails. However, I’ll skip any cliff jumping on skis and big hucks on a bike.
